Linabella’s Gourmet All Natural Pesto alla Genovese

Linabella’s Butternut Squash Soup with
Maple Pesto Cream 
 

Maple Pesto Cream lends a richness to this traditional soup, while the apples, maple syrup and cider lend a pleasant subtle sweetness. 

2 ½ pounds butternut squash, split in half and seeded
½ cup of Vidalia onions, coarsely chopped (can substitute leeks)
4 garlic cloves, peeled
½ cup chopped peeled carrot
2 small apples, peeled, cored and coarsely chopped
5 cups of chicken stock or canned low-salt chicken broth
1 cup of apple cider (can substitute apple juice)
2 tablespoons of real Maple Syrup
½ cup of light cream (can substitute heavy cream, milk or half and half)
2/3 cup of sour cream
2 tablespoons of Linabella’s Maple Pesto
2 tablespoons of Butter
 
Preheat oven – Roast at 375°. 
 
Line baking pan with aluminum foil.  Pour enough olive oil on the bottom of the lined baking pan to cover lightly.  Place butternut squash, cut side down on the olive oil.  Place other cut vegetables in the pan and pour some olive oil on top of the vegetables, to coat (no need to put olive oil on the butternut squash skin).  Cover with aluminum foil and roast in oven until veggies and butternut squash are tender.  Approximately 50 minutes. Cool slightly.
 
When cool enough to handle, scoop out the butternut squash from the skin.  Put in a large saucepan on stove, add the rest of the roasted vegetables.  Add the stock, cider and butter. Using your immersion blender, blend your soup until smooth and creamy.  (If you do not have an immersion blender, work in batches, puree the soup in the blender. Return to saucepan.)
Place sour cream in small bowl.  Mix in the Linabella’s Maple Pesto.  (Soup and Maple Pesto cream can be made 1 day ahead.  Cover separately and refrigerate.)
 
Bring soup to simmer.  Mix in cream.  Ladle soup into bowls.  Spoon Maple Pesto Cream on top of bowls.  Salt and Pepper to taste.
Serves 10 for first course. 
 
Serve with Linabella’s Maple Pesto Corn Muffins.  Use your favorite Corn muffin mix or Corn muffin recipe and add 3 tablespoons of Maple Pesto to the batter.  Bake, following your appropriate recipe.
